Here he grows Aji Bourbon, a rare varietal once assumed a Bourbon mutation but genetically confirmed pure Ethiopian Landrace. This lot uses Mosto Natural: whole cherries ferment sealed in tanks seeded with a natural yeast starter culture, building depth while keeping clarity. The cup: natural wine, toasted cinnamon, raspberry, blueberry gummies.
